Emaar Properties adopts data analytics to reduce food waste
The hospitality and leisure subsidiary of Emaar Properties has entered into partnership with technology firm Winnow as it adopts data analytics to reduce food waste across its hotels.

The hospitality and leisure subsidiary of Emaar Properties has entered into partnership with technology firm Winnow as it adopts data analytics to reduce food waste across its hotels.

According to a statement by Emaar, the partnership is being rolled out in 12 hotels under Emaar Hospitality Group this year.

Leveraging advanced data analytics, the project aims to halve food waste, which is described not only as an environmental problem, but also a significant economic challenge, with food wastage costing the UAE’s national economy around $4.08bn (AED15bn) each year.

Citing a study by Winnow, Emaar noted that 70% of food is wasted before it gets to the customer because “historically, chefs have not been given the latest tools to understand where over-production occurs”.

With this in mind, Emaar Hospitality Group’s hotels – including properties of the premium luxury Address Hotels and Resorts, the upscale lifestyle Vida Hotels and Resorts, and the contemporary mid-scale Rove Hotels – will be equipped with Winnow’s smart scales to help chefs quickly and accurately track food waste.

Speaking on the project, Emaar said: “Winnow develops digital tools to help chefs run more profitable kitchens by cutting food waste in half. The system comprises a digital scale and a connected tablet.

“The weight is recorded automatically and the user selects the reason and identifies the item or dish using the tablet.”

The initiative follows Emaar Hospitality Group’s public pledge to help save one million meals in the UAE in 2018, signed at an iftar hosted by Dr Thani Ahmad Al Zeyoudi, minister of climate change & environment (MOCCAE).  

Commenting on the partnership, Emaar Hospitality Group's chief executive officer, Olivier Harnisch, said: “Our partnership with MOCCAE underlines our social responsibility commitment to support the UAE’s green vision as well as to drive the nation’s goal to be at the forefront in cutting food waste.”
