Rove’s City Centre hotel in Dubai has boosted its sustainability practices through a system called winnow technology.
Since implementing winnow technology to the hotel in November 2018, Rove told Hotelier Middle East that it had reduced its food waste by 40%. Winnow technology is managed through a system that develops digital tools to help chefs run more profitable kitchens by cutting food waste.
The system comprises a digital scale and a connected tablet. The weight is recorded automatically and the user selects the reason and identifies the item/dish using the tablet.
Rove Hotels has installed the software in its kitchen that monitors the usage of raw ingredients and the disposal of dishes which educates chefs on the items that are in most demand, according to Rove Hotels’ senior manager of marketing and communications, Miguel Rojas.
“Our food is far too delicious to throw away - winnow technology keeps our kitchen waste in check,” said Rojas. “Since we started at Rove City Centre, we have seen a reduction in food waste by 40%, which is really positive. We also compost our food waste to feed the earth.”
As part of its sustainability push, the hotel has also completely cut out plastic from its hotels through a range of initiatives such as serving water in re-usable containers.
