Massimo Bottura is set to step behind the stove for two nights on October 16 and 17, at his Italian restaurant Torno Subito at W Dubai – The Palm.
The hotel’s signature Italian venue will see Bottura cooking up an eight-course spread of some of his favourite dishes. Featuring an selection of Italian tradition in evolution created with Massimo’s renowned flair and a few special touches inspired by Dubai, guests will be able to indulge in Torno Subito’s playful cuisine. The dinners are priced at AED 450 per person inclusive of a welcome drink and AED 595 per person with three beverages.
The night will see an eclectic selection of dishes starting with an unconventional Caesar salad, made up of 14 ingredients chosen from Modena, Dubai and New York, before enjoying the Chef’s Favourite of Focaccia with Robiola cheese and black truffle.
Also on the menu is the calzone, a folded pizza filled with mozzarella and scamorza, followed by the Polpo, featuring roasted octopus, green pea velvet and crunchy pickled vegetables before the tartare course of fassona beef tartare with a selection of Mediterranean ingredients.
For the pasta course Bottura will cook up tagliatelle al ragu, egg pasta served with hand-chopped wagyu ragu. Another meat dish of the menu will be the chef’s take on slow-cooked beef tenderloin.
To finish, guests can sample the ‘Tiramisubito’ dessert featuring mascarpone, coffee ice cream, espresso sauce and meringue.
Bottura opened the doors to Torno Subito in February 2019. Departing from the fine-dining experience of Osteria Francescana, Torno Subito takes a more whimsical approach.
